PAN ROASTED COCKTAIL ALMONDS
Ingredients
2 cups almonds
3 tbsp unsalted (sweet) butter
2 tbsp sugar
1 tsp cinnamon (split in half)
1/2 tsp cayenne pepper
1 tbsp fresh rosemary, finely minced
salt & pepper to taste
makes 2 cups
Method
Melt butter on a skillet on low to medium heat. When butter is melted and slightly brown, add almonds. Stir until almonds are coated with butter then add sugar, ½ tsp cinnamon and cayenne pepper. Keep stirring until the almonds are coated with the sugar mixture but not melted. Take off heat and add the remaining ½ tsp of cinnamon, rosemary, salt and pepper to taste. Stir until well blended. Serve warm or at room temperature.
NOTE: If your almonds are already salted or your butter is salted, no need to add salt.
